Edible plant of the Asteraceae family, cultivated for its leaves and roots. There are different varieties of chicory, including endive, endive and radicchio. Chicory leaves can be curly or smooth, and their flavor can vary from slightly bitter to very bitter, depending on the variety. In cooking, chicory is used in both cooked and raw dishes, adding flavor and texture to salads, soups, stews and stir-fry dishes. On the other hand, roasted and ground chicory roots are used as a coffee substitute or to mix with coffee, providing a bitter and earthy flavor.
