It is a traditional sauce of Spanish origin, typical of the region of Murcia, which is made with garlic, olive oil, vinegar and salt. The sauce is prepared by crushing the garlic in a mortar until a paste is obtained, to which olive oil, vinegar and salt to taste are added. The mixture is emulsified until a creamy and homogeneous texture is achieved.

It is used as a dressing or accompaniment for various preparations, such as salads, meats, fish and vegetables, providing an intense flavor and a touch of acidity that enhances and complements the main ingredients of the dish. It is also commonly used in recipes for stews and spoon dishes.
