Traditional sauce of the Mediterranean areas and especially in Catalonia. It is made mainly with garlic and olive oil, and sometimes with the addition of salt and lemon drops. To prepare it, crush the garlic in a mortar and pestle until a fine paste is obtained, then slowly add the olive oil in a steady stream while continuing to crush and mix. The objective is to emulsify the oil with the garlic, creating a thick and creamy sauce. It is used as a dressing or accompaniment to a wide variety of dishes, such as meat, fish, seafood, vegetables and potatoes. It is especially popular in Mediterranean cuisine and is often served with tapas or fideuá.
