A culinary term of Spanish origin that refers to a cooking technique in which garlic is used as the main and distinctive ingredient. Garlic” dishes usually include chopped or sliced garlic, which is fried in olive oil until golden and fragrant, releasing its characteristic aroma and flavor. Often, garlic dishes also include other ingredients such as hot red bell pepper, parsley and sometimes white wine. This technique is commonly used to prepare meats, seafood, fish and vegetables. One of the best known examples of garlic dishes is “gambas al ajillo”, which consists of shrimp cooked in olive oil with garlic and chili.
