Ingredientes

  • Masa Quebrada:
  • 175 g wheat flour

  • 65 g butter

  • 35 g water

  • 1 pinch of salt

  • 1 teaspoon baking powder

  • Filling:
  • 3 egg whites

  • 8 Portobello mushrooms

  • 4 cherry tomatoes

  • Salt and pepper to taste

  • Brie cheese

Pasos

  • Preparation of the shortcrust pastry:
  • In a large bowl, mix flour, small pieces of butter, water, salt, and baking powder. Knead by hand until a homogeneous dough without lumps is obtained. When ready, the dough should appear smooth and compact, avoiding overkneading. Cover with plastic wrap or a silicone lid, and refrigerate for 20 minutes.
  • Stretching and shaping of the dough:
  • Preheat the oven to 180 °C. Stretch portions of the dough to cover the bottom and sides of each hole in the pan, making sure it fits snugly.tartaletas 2tartaletas 3
  • Preparation of the filling:
  • Divide the filling portions into two batches, one with egg, Brie cheese and mushrooms, and the other with Brie cheese, mushrooms and cherry tomato halves. Distribute a portion of the egg whites in each tartlet before adding the rest of the ingredients.tartaletas 3tartaletas 4
  • Baking:
  • Bake the tartlets for 10 minutes or until the edges of the dough begin to brown and the Brie cheese is slightly melted.
  • Serve:
  • Remove from the oven and let cool for a few minutes before unmolding. Serve hot or at room temperature.

Notas

  • Although traditional shortcrust pastry is delicious in its simplicity, a little creativity can transform it. Consider adding dried herbs such as thyme or finely chopped rosemary to the flour mixture. For a touch of color, a teaspoon of turmeric or sweet paprika will not only add flavor, but also a vibrant hue to the dough.

  • Do not hesitate to experiment with different combinations of vegetables according to the season. Asparagus in spring, eggplant in summer, pumpkin in autumn or spinach in winter. Be sure to season the vegetables before adding them to the tartlets to enhance their flavor.

  • Brie cheese is an excellent choice for its softness and melting ability, but the world of cheese offers endless possibilities. A blue cheese for a more intense character, goat cheese for freshness, or a little grated Parmesan on top before baking for a crispy golden layer.
  • Once baked, decorate the tartlets with basil, microgreens, lamb's lettuce, edible flowers or fresh herbs just before serving. This adds a touch of freshness and makes the dish even more attractive.

Key points of the recipe

  1. Preparation of the shortcrust pastry: Be sure to knead the shortcrust pastry ingredients until a compact and homogeneous mixture is obtained. The correct integration of the butter with the flour and water is crucial to achieve a crunchy and delicious texture. Once integrated, it is important to refrigerate the dough to facilitate further handling.
  2. Customized filling: Although the recipe suggests certain ingredients for the filling, the highlight is versatility. Feel free to adjust the filling ingredients according to your preferences or what you have on hand, making sure to maintain a balance of flavors and textures that complement the shortcrust pastry.
  3. Proper baking: Keep an eye on the oven during baking to avoid over or under baking the tartlets. The key is to bake them until the edges begin to brown, which will indicate that they are crispy on the outside and well cooked on the inside, thus preserving the flavor and texture of the fillings.

Pairing with wine

To pair with Tartaletas Rellenas de Verduras, which includes Portobello mushrooms, cherry tomatoes and Brie cheese among its ingredients, I recommend choosing a wine that complements the lightness and richness of flavors of the vegetables and cheese without overwhelming it. Here are several suggestions based on the different components of the dish:

A young Chardonnay, un-oaked or with a slight aging in oak so as not to overdo the vanilla notes, pairs well with the creamy body of Brie cheese and mushrooms. Its moderate acidity and fruity notes can enhance the subtle flavors of the vegetable filling without competing with them.

A Sauvignon Blanc, known for its lively acidity and citrus and herbaceous notes, which can complement the freshness of the cherry tomatoes and the richness of the vegetables. A fresh, light Sauvignon Blanc can counteract the creaminess of Brie cheese and enhance the flavor profiles of vegetables.

Rosé wines from the Provence region of France are known for their balance between acidity and fruit character, with a structure that can stand up to vegetable dishes and mild cheeses. A Provençal rosé is between the lightness required to not overshadow the dish and enough presence to complement both the vegetables and the cheese.

Look for wines with light to medium body. The delicacy of the tartlet filling requires a wine that is not too robust or tannic, to avoid overpowering the subtle flavors of the dish. Serving temperature is important; serve white wines slightly chilled (but not too cold) to maintain their freshness, which will enhance the wine pairing experience.

I would avoid full-bodied red wines with high tannic content, such as a young Cabernet Sauvignon or Malbec, as they can overpower and overshadow the delicate flavors of the tartlet filling, especially the Brie cheese and vegetables.

Beer pairing

To pair with the Tartaletas Rellenas de Verduras that present a combination of delicate but defined flavors from the Brie cheese, mushrooms, and cherry tomatoes, a beer that complements without overshadowing these ingredients is ideal. In this case, I suggest opting for a Saison or a Blonde Ale.

A Saison: a beer of Belgian origin is known for its slightly fruity, spicy character and subtle acidity. Its effervescence and medium body do not compete with the lightness of the tartlets, but help cleanse the palate between bites. The spicy and slightly fruity notes of a Saison can enhance the flavors of the filling, especially the subtle umami flavor of the mushrooms and the creaminess of the Brie cheese, offering a pleasant balance.

Blonde Ales are known for their smooth and balanced profile, making them versatile companions for a wide variety of dishes. They have a light malt flavor and often a subtle hint of hops that provide an interesting contrast without overpowering the vegetable and cheese flavors. The carbonation and lightness of this style help to enhance the crispness of the dough and complement the freshness of the ingredients.

I would avoid very bitter beers or beers with strongly smoky profiles, such as intense IPAs or strong Stouts, as they can be too dominant and run the risk of overshadowing the delicate flavors of the dish. The search for balance and complementarity is key in the pairing of this type of recipes.
