Key points of the recipe

  1. Drain the cucumber well: Before mixing the cucumber with the rest of the ingredients, make sure to drain it properly to remove excess water. This will prevent the sauce from thinning and losing consistency.
  2. To enhance the flavor of the cumin: Toast the ground cumin in a frying pan without oil for one minute before adding it to the mixture. This will intensify its flavor and aroma, adding a deeper touch to the sauce.
  3. Chilling time: Chill the sauce in the refrigerator for at least one hour before serving. This allows the flavors to blend and intensify, resulting in a more cohesive and delicious sauce.

Pairing with wine

Raita sauce is a refreshing dish that is generally served as a side dish, so the appropriate wine will depend largely on what this dish is served with. But, if we want to consider Raita on its own, it could go well with a light-bodied, high-acidity white wine to complement the yogurt content and sprinkle it with the spices. A Sauvignon Blanc is a pleasant choice that comes with citrus and herbaceous notes, which goes very well with the fresh herbs of the Raita.

That said, it would be wise to avoid strong red wines, such as a Cabernet Sauvignon or Malbec. They have strong tannins that do not combine well with the fresh and creamy flavors of the Raita.

Finally, if the Raita is served as part of a larger spicy meal, a rosé or even a sparkling wine might be a wise choice. They cleanse the palate and complement a variety of flavors.

Beer pairing

For the Raita sauce, they believe it pairs best with an India Pale Ale (IPA). India Pale Ale hops can intensify the flavors of mint and coriander in Raita sauce. In addition, the citrus and floral notes of the IPA can complement well the cool and refreshing flavors of cucumber and yogurt. The carbonation in the beer will also help cut the creaminess of the yogurt, balancing the recipe.

Beers with strong or very roasted flavors, such as Stout or Porter, should be avoided when pairing with this recipe. These are beers that could overshadow the subtle flavors of the sauce. The same goes for beers with high alcohol content, which are not recommended because they could overwhelm the fresh and delicate flavor of the Raita Sauce.
