Ingredientes

  • 2 Puff pastry sheets

  • 125 ml Whipping cream 35% fat

  • Olive oil

  • 200 gr Chocolate

  • Sugar

  • Cinnamon

Pasos

  • Preparation of the chocolate truffle
  • Heat the cream in a saucepan over medium heat.
  • When it starts to boil, add the chocolate and stir until it is completely melted.
  • Pour the mixture into a dish and let it solidify.
  • Preparation of ravioli
  • Roll out the puff pastry sheets and cut squares of the same size.
  • Place a piece of truffle on a square of puff pastry and cover with another square.
  • We secure the edge of the ravioli well and paint them with a little water.
  • Heat enough oil in a large frying pan over medium-high heat and fry the ravioli until golden brown and crispy.
  • Remove the ravioli from the oil and drain on absorbent paper.
  • Batter and presentation
  • Mix sugar with a little powdered cinnamon and coat the ravioli in this mixture.
  • Serve the ravioli uncut so that they explode in the diner's mouth. It can be served with vanilla ice cream in case you need even more calories.

Notas

  • Liqueur can be added to the truffle to make them more fun, reducing a little the amount of cream
  • >
  • It can be served with vanilla ice cream for a more summery version
  • >
  • For a lighter recipe "un pocoo" they could be made in an air fryer or air-fryer, although I have not tried it.

Key points of the recipe

  1. Temperature control: Be sure to heat the cream over medium heat and add the chocolate only when it starts to boil to prevent it from burning. The mixture should be homogeneous before cooling to solidify.
  2. Sealing the ravioli: When assembling the ravioli, it is crucial to seal the edges well to prevent the filling from coming out during frying. Paint the edges with a little water to help them stick together and press firmly.
  3. Frying and draining: Fry the ravioli in hot oil until golden brown and crispy. Once fried, it is important to drain them well on absorbent paper to remove excess fat and maintain the crispy texture.

Pairing with wine

This recipe is difficult to pair with wine due to the presence of chocolate. Chocolate is a dominant flavor that can make wines not intense enough or feel unbalanced. If I had to choose a wine, I would opt for a sweet wine such as Port or a dessert wine to balance the sweetness of the chocolate.

Port wine is a fortified wine produced in the Douro region of Portugal. Its flavor is rich and sweet, and can range from red fruits to dark fruits and chocolate, making it a good complement to puff pastry ravioli filled with chocolate truffle.

An ice wine, on the other hand, is a type of dessert wine that is made from grapes that have been frozen while still on the vine. This process concentrates the sugars in the grapes, resulting in a wine that is sweet, but also high in acidity, which can help balance the richness of the dish.

We would avoid pairing this dish with dry red wines or dry white wines, as their lack of sweetness could create an unpleasant contrast with the sweetness of the dish.

Beer pairing

As for the beer, a Stout or Porter would pair well with the puff pastry ravioli filled with chocolate truffle. Both styles of beer are dark and often have notes of chocolate and coffee, which could complement the chocolate truffle filling well.

Stout and porter are dark ales brewed with roasted malt. These malts give these beers their characteristic chocolate and coffee notes, as well as their dark color.

We would avoid pairing this dish with light or very bitter beers, such as IPA beers, as their citrus and bitter flavors could clash with the sweetness of the dish.
