Ingredientes

  • 2/3 Large ripe mangoes

  • 1/2 Lemon juice

  • 2 c.s. tablespoons sugar

  • 500 ml whipping cream

  • Cardamom powder

  • 70 gr plain Greek yogurt

  • 1 handful of chopped pistachios (optional)

Pasos

  • Preparation
  • Peel the mangoes and remove the mango flesh from the rind and stone. Cut the mango pulp into pieces, reserving some pieces to decorate at the end.
  • Squeeze the juice of half a lemon and blend it with the mango pulp in a food processor until a smooth texture without lumps is obtained.
  • Add a teaspoon of sugar, a teaspoon of cardamom powder and the yogurt. Whisk again.
  • In a separate bowl, whip the cream until it thickens but does not reach stiff peaks.
  • Fold the mango-yogurt mixture into the whipping cream, mixing slowly and thoroughly. Also add the mango puree, alternating between the cream and the puree, until a homogeneous cream is obtained.
  • Decoration and cooling
  • Divide the cream into individual containers (bowls, glasses, cups) and decorate with the reserved mango pieces. If desired, chopped pistachios can be added.
  • Cover with cling film and leave to cool in the refrigerator.
  • Serving
  • Before serving, drizzle with a little mango juice. Enjoy!

Notas

  • It is important to use very ripe mangoes for this recipe to get the maximum sweet and juicy flavor from the mango. If the mangoes are not ripe enough, the cream may turn out a little sour.
  • Whip the cream on medium speed to prevent it from turning to butter. It should be thick but still a little runny.
  • >
  • It is essential to gently fold the mango-yogurt mixture into the cream to prevent the cream from losing its fluffy texture.
  • >
  • Lastly, but I reserve this tip for those who have read this far: consider cooling the containers in which you will serve the cream before filling them. This will keep the cream cooler for longer. 😉

Key points of the recipe

  1. Mango Selection: Use very ripe mangoes to ensure a sweet and juicy flavor. If the mangoes are not at their optimum ripeness, the cream may turn out sour.
  2. Whipping the cream: Whip the cream at medium speed until it is thick but not completely whipped. This will prevent it from turning to butter and maintain the desired texture for the cream.
  3. Careful Incorporation: Mix the mango and yogurt preparation with the cream in a delicate and enveloping way to prevent the cream from losing its fluffy texture and to achieve a homogeneous cream.

Pairing with wine

The pairing for this recipe can be a bit tricky due to its intrinsic sweetness, enhanced by the ripe mangoes and added sugar. Ideally, the wine selected should have sufficient acidity to counteract the sweetness of the dessert without overpowering its flavors.

An ice wine or Icewine would be an exceptional combination for this recipe. This type of wine is made from grapes that have been allowed to freeze while still on the vine. This process creates a wine that is incredibly sweet and acidic at the same time. These wines have notes of tropical fruits, peach and apricot, which would perfectly complement the mango flavor.

A sparkling white Moscato wine would also be eligible. These wines have a sweetness of their own with a balanced acidity and their effervescence would be a refreshing addition to the creaminess of this dessert.

Avoid wines with high tannin content such as Cabernet Sauvignon or Malbec, as these will tend to leave a bitter taste in the mouth when combined with sweet foods.

On the other hand, if you prefer a non-alcoholic pairing, a green tea or chilled jasmine tea could be an excellent choice. Both types of tea have a slight acidity that goes well with the sweetness of the mango, and their herbaceous flavor would provide a nice contrast to the creaminess of the dessert. In addition, these teas are refreshing and light, which makes them perfect to accompany a dessert like this one.

Beer pairing

This Mango Crema de Mango recipe has prominent flavors of sweet tropical fruit and creaminess from the cream and Greek yogurt. In addition, there are spice notes from the cardamom and a slight acidity from the lemon juice.

An ideal pairing for this type of dessert would be a Fruit Lambic, specifically a Mango Lambic or even a Peach Lambic such as the famous Peche Lambic. Lambic beers are known for their sour and fruity nature, and flavored beers such as mango or peach have the ability to complement the sweet, tropical flavors of the mango cream, while providing a pleasant acidity that can balance the richness and creaminess of the dish.

In addition to Lambic, a sour or mild sour beer might also be a good choice. Sour beers can provide a refreshing counterpoint to the sweet, rich flavors of the cream.

As for pairings to avoid, any extremely bitter beer, such as a strong IPA, could conflict with the flavors of this dessert and make it feel sweeter than it really is. Very roasted or smoked beers are also not recommended, as they could dull the tropical and refreshing flavors of the dish.
