Today I felt like having something sweet, but not too sweet, something chocolatey, but without too much sugar and fat. So, I thought of crepes. They are dfun to make, easy and healthy and of course, suitable for all palates 😉.

There are many types of crepe batter such as with light cream (18 % MT), semi-skimmed milk, water, oat or almond drink, wheat or corn flour. You can make them however you want, I just give you ideas to find your ideal crepes.

For this recipe I have not used any added sugar, but I have filled them with chocolate 85% Lidl for not containing excessive sweeteners or fats. It doesn't really matter what chocolate you use, the important thing is that it doesn't contain sweeteners or a lot of saturated fats, as they are harmful to your health.
>
Start by sifting the flour, which will ensure the silky texture of your crepes, and combine with the remaining ingredients to obtain a uniform mixture that will transport your senses to the heart of Paris with every bite. By using semi-skimmed milk and 85% chocolate, you are opting for more balanced options, and the touch of spices, if you choose to add them, will offer you an unparalleled aroma and flavor.
>
Feel the comforting sensation of watching the chocolate melt over the hot crepe and enjoy that first bite where sweet, creamy and crunchy melt together. Perfect for any time of the day, these crepes are a blank canvas for your culinary creativity.

Dare to discover how simple flavors are transformed into a feast for your senses, and accompany this gastronomic experience with a playlist that inspires you and transports you to the cobblestone streets of France. Cook, taste and experiment with this sweet balance between healthy and exquisiteo

Key points of the recipe

  1. Sifting the flour: Be sure to sift the flour before mixing it with the other ingredients. This will prevent lumps and ensure a smooth and silky texture in your crepes.
  2. Resting the dough: Do not skip the step of refrigerating the dough for 30 minutes. This resting time is crucial for the ingredients to integrate well and make the dough more manageable when cooking.
  3. Cooking and filling: Use a non-stick pan over medium heat and do not forget to add butter to prevent the crepes from sticking. Make sure the chocolate is of good quality and with a high percentage of cocoa to maintain the balance between healthy and delicious.

Pairing with wine

To pair with Crepes Saludables con Chocolate, you could choose wines that complement the richness of the dark chocolate and the lightness of the crepe batter. Wines with a certain sweetness and body can be an interesting choice to enhance the contrast between the bitterness of the chocolate and the smoothness of the dough.

One option could be a slightly cool Tawny Port. The fruity profile and nutty notes of a Tawny can harmonize with the intensity of 85% chocolate. This type of fortified wine, having sweetness and body, but also acidity to refresh the palate, can help balance the richness of the chocolate crepes.

Another option is a Banyuls from France or a Maury, which are fortified wines from the Languedoc-Roussillon region. These wines offer both sweetness and intense red fruit flavors that can complement dark chocolate without overwhelming the more delicate character of the crepe.

If you prefer a non-fortified wine, a Recioto della Valpolicella, which is an Italian sweet red wine, might be suitable. Its natural sweetness, along with flavors of cherries and raisins, could pair well with the intense flavor of dark chocolate.

It is important to serve these wines slightly cool (but not cold) to enhance the tasting experience. However, wines with too much tannin or dry white wines are not usually the best choice for dishes containing chocolate, as the contrast can cause a shock on the palate and distort the flavors.

Avoid very dry or acidic wines: They can create an imbalance with the sweetness of the chocolate and the finesse of the crepe. We should also avoid red wines with high tannin content: They can be bitter compared to the rich taste of dark chocolate. Finally, it is also not advisable with very light white wines: they would be overshadowed by the intensity of the chocolate.

As in any pairing, personal tastes play an important role, but the above suggestions could be a good starting point to enjoy a harmonious taste experience.

Beer pairing

When it comes to pairing crepes with chocolate, it is preferable to opt for beers that have a certain presence and complexity to complement and balance the intensity of the dark chocolate and the delicacy of the crepe batter.

Recommended pairings:

Stout or Porter: Stout or porter beers have notes of chocolate, coffee and roasted malt that can perfectly complement the rich flavor of dark chocolate in crepes. Look for a Stout that is not too bitter or alcoholic so that it does not overwhelm the dish.

Wheat beer (Weizenbier): A wheat beer can bring a certain lightness and freshness to the palate, with subtle notes of spice and fruit that can balance the richness of chocolate and the smoothness of crepes.

Belgian Dubbel or Quadrupel: These stronger, more complex beers have notes of dried fruits, spices and caramel, which can harmonize with the deep flavor of the 85% chocolate and optional spices if you choose to include them in the recipe.

Pairings to avoid:

– Excessively bitter beers: IPAs or beers with a high bitterness index can clash with the sweetness and bitter notes of dark chocolate.

– Very light beers or beers with little character: For example, very light lagers or Pilsner beers may be overshadowed by the intensity of the chocolate, and will not add much to the pairing.

Test the serving temperature, as some beers, such as Stouts and Porters, can express their chocolate notes better at slightly warmer temperatures.
