  • Heat the pan and spread with butter: Heat a non-stick pan over medium heat and add a teaspoon of unsalted butter. Be sure to coat the pan well with the butter.
  • Cooking the pancake batter: When the pan is hot, pour a large spoonful of pancake batter and shape it into a round. Cook the pancakes for about 2 minutes on each side, or until golden brown and you can flip them with a spatula without the batter sticking.

Key points of the recipe

  1. Dough consistency: Be sure to mix the ingredients well until a light but consistent dough is obtained. Texture is key for the pancakes to hold their shape and not fall apart during cooking.
  2. Proper cooking: Heat the pan thoroughly before adding the batter and cook the pancakes over medium heat for about 2 minutes on each side. It is important that they are golden brown and that you can turn them easily without sticking.
  3. Ripeness of the banana: Use ripe bananas for the recipe, as they will provide the natural sweetness and spongy texture desired for the pancakes. In addition, ripe bananas will be more easily mashed and better integrated into the batter.

Pairing with wine

The recipe we are looking at in this case is a soft and light dessert, with a predominance of fruits and sweet and subtle flavors, but not saturating. One of the undisputed protagonists is the banana, which together with the honey, is noted in its moderate sweetness.

When pairing this dish, I would recommend going in the direction of a sweet wine, with good acidity to balance the sweetness of the dessert. The perfect choice would be a late harvest wine, be it Moscato d’Asti or even a late harvest Riesling or Gewurztraminer. Although these are sweet wines, they are also balanced with good acidity, which keeps them from being cloying. These wines have fruity notes that go very well with the banana and the other ingredients of the recipe.

Alternatively, a sweet sparkling wine could be another excellent option. In this case, we could opt for a Prosecco with a certain sweetness, whose effervescence helps cleanse the palate and prepare it for the next mouthful.

The aforementioned options are focused on white wines, although it is true that sweet red dessert wines could be considered, they could be too intense for healthy pancakes and cover their flavor. Therefore, I would avoid pairing with red wines.

Beer pairing

For this Healthy Pancakes recipe, a beer to consider would be a Blonde Ale, which is a light and mild type of beer. This beer should accentuate the sweet flavors of the pancakes, coming from the bananas, honey and vanilla, without overwhelming the flavor of the dish.

In addition, the Blonde Ale has a touch of malt that can complement the oatmeal in the pancakes and a slight hint of hops that will not be at all intrusive with this dessert dish.

However, it is important to note that beers are not typically paired with dessert dishes although there are exceptions. If beer pairing does not appeal to you, you could opt for a cup of coffee or a glass of milk as they are more traditional choices for this type of dish. Please avoid any beers with high alcohol content or strong, bitter flavors such as IPAs, as these may overpower the mild, sweet flavors of the pancakes.
