Ingredientes
0,5 small spring onion
0,25 red bell pepper
2 ripe avocados
2 pinches salt
50 g fried ground almonds
0,5 lime (juice)

- Chop the onion and red bell pepper into small cubes (brunoise). Reserve on cutting board.
- Cut the avocados in half, remove the pit and flesh. Place the pulp in a deep bowl.
- Avocado mashing
- With a fork, mash the avocado pulp in the bowl until you reach a consistency you like, I like to leave some chunks.
- Incorporate all ingredients
- Add the lime juice to the avocado puree and mix well.
- Add the chopped onion and red bell pepper, ground almonds and pinch of salt to the bowl.
- Mix everything carefully until the ingredients are completely integrated and the guacamole looks great.

- Using avocados that are at the right point of ripeness is crucial. A ripe but firm avocado will make it easier to obtain the perfect texture for guacamole, creamy but with body.
- When mashing the avocado, consider mashing it to a texture that still has small chunks rather than a completely smooth puree. This adds textural interest and makes each bite slightly different.
