Ingredientes

  • Bleaching
  • 188 gr Egg (4 eggs size M)

  • 2 t.c. teaspoon Inverted sugar and honey

  • Mix
  • 285 ml Mild olive oil

  • 8 gr Instant yeast (e.g. Royal)

  • A little salt

  • 265 gr Sugar

  • 90 ml Milk

  • 315 gr Loose flour

  • 1 Orange (grated peel)

Pasos

  • Whisk the eggs and sugar in a bowl.
  • Slowly add the softened olive oil, invert sugar and grated orange peel to the blanched mixture.
  • Add the milk to the mixture.
  • Mix the yeast, flour and salt in another bowl, sift them and add them to the dough. Be sure to mix all the dry ingredients well so that they are well distributed in the dough.
  • Wrap the dough well and let it rest in the refrigerator for at least 2 hours (it can also be left overnight).
  • Fill muffin tins 3/4 full and sprinkle with granulated sugar.
  • Place the molds in a cake pan and add a little apple powder so that it adheres well during baking in the oven.
  • Bake the muffins in a preheated oven at 210 °C for approximately 15 minutes. Remember not to open the oven during the first few minutes of baking or the muffins may deflate.
  • If desired, decorate the cupcakes with chocolate or lemon pearls. For any filling, put a base of dough and alternate filling, dough, dough, filling, dough, so that the filling does not remain at the bottom.

Notas

  • For a more intense orange flavor, you might consider adding a little orange juice to the batter.
  • The muffins will keep very well for several days if stored in an airtight container once they have cooled completely.

Key points of the recipe

  1. Whipping eggs and sugar: Be sure to whisk the eggs and sugar well until the mixture is pale and frothy, as this will incorporate air and help the muffins rise and become fluffy.
  2. Resting the dough: It is crucial to let the dough rest in the refrigerator for at least 2 hours, or even overnight if possible. This helps the ingredients to integrate better and the batter to cool, which contributes to a better texture and shape of the muffins when baked.
  3. Temperature and baking time: Preheat the oven to 210 °C and bake the muffins for 15 minutes without opening the oven for the first few minutes. This is important to prevent the muffins from deflating and to achieve even baking and good formation of the characteristic muffin top.

Pairing with wine

For this muffin recipe, its best accompaniment could be a sweet and fresh white wine or a sweet sparkling wine such as a Moscato or a dessert wine such as a Sauternes.

Sweet white wines and sweet sparkling wines can help balance the sweetness of the muffins. These wines are known for their fruity notes, which can complement very well the orange flavor in the cupcakes and also the touch of honey if that ingredient was chosen instead of invert sugar.

In the case of Sauternes, it is a wine that pairs very well with desserts due to its sweetness and balanced acidity, and also has notes of citrus fruits such as orange that would complement perfectly with the recipe.

It should be noted that, in general, the pairing of wines with desserts can be somewhat subjective and depends on one’s personal palate. However, it would be advisable to avoid wines with a high degree of tannins such as robust reds because they could overpower the delicate flavor of the muffins and result in an inharmonious pairing.

Beer pairing

The muffins are a light, fluffy sweet with hints of citrus due to the orange zest. As a general rule, when pairing beers, we look for contrasts or similarities that enhance the flavors.

In this case, a good choice would be a Belgian Witbier beer. This type of beer is a wheat-based, light beer with a mild citrus and spicy flavor that could complement well the flavor and texture of the muffins. In addition, its effervescence and slight acidity may help cleanse the palate after each bite.

Another option could be a Fruit Beer, which are beers with added fruit in their production. These beers, depending on the fruit from which they are brewed, may have citrus, sweet or sour notes that could pair well with muffins. For example, a raspberry beer would go well with the sweetness of the muffins and bring out the orange notes.

Finally, if you are looking for a more marked contrast, you could opt for a Strong Ale or an Imperial Stout. These beers are stronger, with caramel or chocolate notes and a more bitter, roasted flavor, which could provide an interesting contrast to the sweetness and fluffiness of the cupcakes.

In addition, we should avoid those beers with too intense and bitter flavors such as IPAs, which could dull the flavor of the muffins. Likewise, smoked beers or beers with very spicy flavors may not go well with this type of sweet.
