Ingredientes

  • 2 large shrimps

  • 1/4 eggplant

  • 1/4 zucchini

  • 4 shiitake mushrooms

  • 4 green asparagus

  • Tempura sauce
  • 80 ml dashi broth

  • 20 ml of mirin

  • 20 ml soybean

  • Batter
  • 100 ml mineral water

  • 50 g of sifted wheat flour

  • 1/2 egg

  • Clean the mushrooms with a damp cloth, cut to a size suitable for eating with chopsticks and set aside.
  • Peel the prawns without removing the tails and set aside.
  • Clean, cut and set aside the eggplant, zucchini and asparagus.
  • Prepare the tempura sauce: mix the dashi, mirin, soy sauce, bring to the boil and allow to cool.
  • Beat the egg in a bowl, add the cold water and the wheat flour and mix lightly. Reserve in the refrigerator so that it is cold at the time of breading.
  • Heat the oil in a saucepan to a temperature of 175 °C.
  • Batter the ingredients, fry for 2 or 3 minutes, plate and serve immediately, accompanied by a bowl of warm tempura sauce for dipping.
