Ingredientes

  • 2 large onions, finely chopped

  • 400 g bomba rice

  • 150 g mascarpone cheese

  • 2 finely chopped garlic cloves

  • 1,2 liter chicken broth

  • Green mince
  • 50 ml cold water

  • 4 c.s. tablespoons basil

  • 1 small garlic clove

  • 50 ml oil

  • 2 c.s. tablespoons parsley

  • 50 g spinach leaves

  • salt to taste

  • In a thick-bottomed pan, pour a little oil and heat it over medium heat. Add the finely chopped onions and cook carefully so that they do not take color. When the onions are tender and soft (approximately 15-20 minutes), add the chopped garlic and cook for a couple of minutes more. Season with salt to taste, to bring out the flavors of this delicious base.
  • Add the bomba rice to the pan with the sofrito, stirring so that the grains are impregnated with the flavors of the onion and garlic. The rice should be pearly, avoid coloring the rice during this process.
  • Then pour in the hot chicken broth a little at a time, covering the rice initially and adding more as needed. Maintain a steady boil while cooking the rice for 17 minutes.
  • Making the picada
  • While the rice is cooking, take time to prepare the refreshing green picada.
  • In the bowl of a blender, place the cold water, basil, garlic, oil, parsley and spinach leaves. Blend the mixture until a smooth and homogeneous consistency is obtained.
  • When the rice is cooked to perfection, add the freshly prepared green picada and mascarpone cheese to the casserole. Mix all ingredients well and cook for an additional minute to integrate the flavors.
  • Remove the pan from the heat and allow the creamy green rice to rest for 2 to 3 minutes. This step is essential for the flavors to meld and settle into the rice.   • If you wish, you can substitute the chicken broth with vegetable broth for a vegetarian version of this dish.
