Ingredientes

  • 2 kg chicken wings or carcasses

  • 120 gr carrot chopped mirepoix

  • 120 gr chopped onion mirepoix

  • 80 gr chopped celery mirepoix

  • 100 gr finely sliced leeks (emincé)

  • 100 gr mushrooms cut in quarters

  • 50 gr finely sliced celery (emincé)

  • Bay leaves

  • Fresh thyme sprigs

  • Parsley logs

  • 1 c.c. white peppercorns

  • 1 strip of dried lemon peel

  • 5 liters water

Pasos

  • Start by carefully washing the chicken wings or carcasses to remove any dirt or debris.
  • Blanch the chicken wings by placing them in a pot of boiling water for a few minutes. Then, drain them, rinse them with cold water and carefully remove any remaining nibs.
  • Place the chicken wings or carcasses in a large pot and cover them completely with the 5 liters of water. Bring the pot to a boil and, when it begins to boil, remove the foam that forms on the surface.
  • Add the mirepoix (carrot, onion and celery mixture), leeks, mushrooms, celery, bay leaves, thyme, parsley stems, white peppercorns and dried lemon peel to the pot.
  • Cook the broth over low heat and with the pot semi-covered, making sure it does not boil excessively. As it cooks, carefully remove any fat and albumen that accumulates on the surface.
  • Let the broth simmer for at least 4 hours to allow the flavors of the ingredients to blend and intensify.
  • Once the cooking time has elapsed, degrease the broth by removing any excess fat from the surface. Then strain the broth into a clean container, removing the solids.
  • Label the container with the name and date of preparation of the broth, and let it cool before storing it in the refrigerator or freezer for later use.
