Adding or adjusting seasonings and spices, such as salt, pepper, herbs, sugar, acids (vinegar, lemon) and other flavors, to a preparation or food in order to enhance, improve or balance its natural flavor and aroma. Seasoning can be a critical step in the preparation of dishes, as it greatly influences the perception of taste and the quality of the final result. Seasoning can be done at different stages of cooking, but it is common to rectify and adjust the seasoning just before serving a dish.
