Ingredientes

  • 7 sausages

  • 10 gr water

  • 10 gr extra virgin olive oil

  • 20 gr chia seeds

  • 230 gr rectangular puff pastry dough (Buitoni type)

Pasos

  • Set your oven to 180 °C, ensuring that the heat is distributed both above and below.
  • In a frying pan over medium heat and without adding extra oil, fry the sausages. Keep them in motion until they obtain a uniform golden color.
  • Let them cool slightly before handling.
  • Once cooled, cut each sausage in half to obtain smaller pieces.
  • Roll out the puff pastry dough and, using a sharp knife, divide it into strips about 3 fingers wide (straight cutting technique).
  • Take a strip of puff pastry and wrap it around a piece of sausage, making sure the dough completely surrounds the meat. Use a little water as 'glue' by applying it with a brush to one end of the dough to seal it around the sausage. Repeat the process with all the sausage pieces.
  • Place the wrapped salads on a baking sheet previously covered with baking paper. With a brush, brush the surface of each with extra virgin olive oil and sprinkle the chia seeds on top.
  • Place the tray in the preheated oven and bake for approximately 10 minutes or until the puff pastry is a shiny golden color.
  • Once baked, serve the salads immediately to enjoy them hot and crispy.

Notas

  • Experiment with different types of stuffing, such as Iberian pork sausages, spiced chicken sausages, or even vegetarian sausages for a meat-free option. The variety of flavors will enrich the final result.
  • >
  • Before glazing the salads, infuse the extra virgin olive oil with garlic and herbs. Gently heat the oil with a crushed garlic clove and some rosemary or thyme for a few minutes. Let cool and use this oil to provide additional aroma to your puff pastry.
  • If you are feeling adventurous and have the time, making your own puff pastry dough can make a substantial difference in flavor and texture. Homemade dough can be crunchier and less processed than commercial variants.
  • Consider lightly toasting a mixture of seeds (such as black sesame, poppy or flax seeds) before sprinkling them over the salads. This will intensify its flavor and add an additional crunchy texture.

Key points of the recipe

  1. Prepare the sausages: Brown the sausages evenly in a frying pan until golden brown and let them cool before wrapping them in the puff pastry.
  2. Wrap properly: Cut the puff pastry into suitable strips and wrap each piece of sausage completely, making sure to seal the edges well with oil so that they do not open during baking.
  3. Customization and baking: Before baking, customize your saladitos by painting them with oil and sprinkling seeds or spices to your liking to give them a special and unique touch. Bake until the puff pastry is golden brown and crispy.

Pairing with wine

For the puff pastry and sausage saladitos recipe, a wine pairing may not be the first thing that comes to mind due to the simplicity and casual nature of this appetizer. However, there are wine options that can nicely complement the rich, savory flavor combination of sausage and puff pastry, especially when looking to enhance an informal occasion or gathering. For this recipe a light to medium bodied sparkling wine is ideal. It provides a refreshing contrast that can enhance and balance the richness of the snacks, making each bite an even more enjoyable experience.

A sparkling wine would be an excellent choice. Specifically, a Cava Brut or Prosecco. The main reason behind this selection is the ability of sparkling wines to cut through the richness and fat of sausages and puff pastry due to their lively acidity and bubbles, which act as a palate cleanser. This creates a more balanced taste experience, refreshing the mouth between bites.

Selected sparkling wines tend to have a lighter to medium body, which is ideal in this case. A wine with too much body could overpower the taste of the aperitif, while a lighter wine such as a Cava Brut or Prosecco complements without overpowering, keeping the experience pleasant and light.

Wines with too much tannin or those that are excessively robust or full-bodied, such as a heavy Cabernet Sauvignon or Syrah, should be avoided. These can overwhelm the simple, straightforward nature of the puff pastry and sausage salads, rather than complement them.

Beer pairing

These puff pastry and sausage salads pair excellently with a Pilsner beer. Pilsners are light, refreshing beers with a touch of bitterness that can nicely complement the richness of the sausage and the “buttery” flakiness of the puff pastry. The crisp, salty nature of this snack will be balanced by the cleanness and subtle malt sweetness of the beer, creating a balance between food and drink that enhances the flavors of both, while the bubbly carbonation will help cleanse the palate, preparing for the next bite.

Another aspect to consider is that Pilsners usually have a relatively moderate alcohol percentage, which makes them a good companion for meals and snacks without overshadowing the flavor of the food. In addition, the lightness of this beer makes it a refreshing option, especially if these salads are served as an aperitif on a warm day or at a social gathering.

Avoid pairings with extremely bitter or full-bodied beers, such as Imperial Stouts or double IPAs. These could overpower in flavor the delicacy and simplicity of the salads, dominating rather than complementing them.
