Key points of the recipe

  1. Quality of ingredients: Use well-ripened bananas and good quality dates to ensure the natural sweetness of the ice cream. The almond drink must be of good quality and the Speculoos cookies, preferably Lotus brand, to obtain the desired characteristic flavor.
  2. Mixing process: Grind all ingredients at high speed for one minute until a homogeneous mixture is obtained. This will ensure that the texture of the ice cream is smooth and creamy, with no chunks of fruit or cookie.
  3. Proper freezing: Pour the mixture into ice cream molds and make sure to freeze them for 24 hours. This is crucial for the popsicles to freeze completely and reach the right consistency before consumption.

Pairing with wine

Given that we are dealing with a dessert that is a mix of sweet flavors and a bit of savory order thanks to the Lotus cookies and peanut butter, a strong red wine might compete too much with these flavors. In this case, the recommendation would be an ice wine or Eiswein. This wine is sweet and fruity, with high acidity that will help balance the sweetness of the banana and date, as well as the chocolate, and complement the savory notes of the cookies and peanut butter.

However, a non-alcoholic alternative could be a rooibos infusion, which has a slightly sweet and nutty flavor profile that would complement the flavors of this dessert well.

I would avoid pairing it with a very dry wine, a strong red wine or one that is too citrusy, as they could unbalance and compete with the flavors of this Chocolate Lotus ice cream.

Beer pairing

For this chocolate and Lotus ice cream recipe, I would recommend a Stout beer, particularly one with a sweeter flavor.

Stout beers have cocoa and coffee tones that would complement chocolate ice cream very well. In addition, they often have caramel malt notes and sometimes a bit of sweetness, which could work well with the ripe bananas, dates and Lotus crackers used in this recipe.

However, as always, the pairing of beers and food can be subjective and will depend largely on the personal tastes of each individual. Remember, the most important thing is to enjoy what you are eating and drinking.

As for pairings to avoid, in general beers with high bitterness, such as IPAs, could compete too much with the sweet flavors of this dessert and would not result in a balanced pairing.
