2 Puff pastry sheets
125 ml Whipping cream 35% fat
Olive oil
200 gr Chocolate
Sugar
Cinnamon

- Preparation of the chocolate truffle
- Heat the cream in a saucepan over medium heat.
- When it starts to boil, add the chocolate and stir until it is completely melted.
- Pour the mixture into a dish and let it solidify.
- Preparation of ravioli
- Roll out the puff pastry sheets and cut squares of the same size.
- Place a piece of truffle on a square of puff pastry and cover with another square.
- We secure the edge of the ravioli well and paint them with a little water.
- Heat enough oil in a large frying pan over medium-high heat and fry the ravioli until golden brown and crispy.
- Remove the ravioli from the oil and drain on absorbent paper.
- Batter and presentation
- Mix sugar with a little powdered cinnamon and coat the ravioli in this mixture.
- Serve the ravioli uncut so that they explode in the diner's mouth. It can be served with vanilla ice cream in case you need even more calories.

- Liqueur can be added to the truffle to make them more fun, reducing a little the amount of cream >
- It can be served with vanilla ice cream for a more summery version >
- For a lighter recipe "un pocoo" they could be made in an air fryer or air-fryer, although I have not tried it.
